Impact of the installation of the semi-modern slaughterhouse on the quality of meat in Bumba, DRC

Abstract

This study evaluates the impact of the installation of a semi-modern slaughterhouse in the city of Bumba, Democratic Republic of Congo, on the sanitary quality of meat and the socio-professional life of stakeholders in the meat sector. The adopted methodology is comparative, based on the collection and analysis of data before and after the commissioning of the slaughterhouse. Data were gathered through direct observation, interviews with actors (butchers, slaughterers, inspectors), and consultation of existing documents. The main parameters studied include hygiene practices, veterinary examinations before and after slaughter, animal diseases, number of animals slaughtered, as well as the socio-economic impact. Before the slaughterhouse installation, slaughter conditions were marked by poor waste management, lack of adequate facilities, and a high risk of microbial contamination. After the establishment of the semi-modern slaughterhouse, significant improvements were observed, notably thanks to cemented floors, proper wastewater drainage, adequate sanitary facilities, and appropriate lighting. Veterinary examinations are now more rigorous, which limits health risks. Moreover, the socio-professional life of butchers has become more structured with the creation of associations, better work organization, and transparent management of revenues. The slaughterhouse also plays an important economic role by mobilizing tax revenues from slaughter activities, contributing to the financing of public infrastructure. However, some animal diseases persist, requiring strengthened veterinary monitoring. This study highlights the importance of investing in modern infrastructure and governance to improve food safety, protect public health, and support local development.
